Valentine's Cupcakes

After Christmas we ended up with a plethora of candy that once occupied our stockings. Instead of throwing it out (or binging in front of the tv...) I used it for baking. I topped mini red velvet cupcakes with peppermint icing and then sprinkled the tops with crushed candy canes. After all, everything is red on Valentine's Day! They would also be cute with pink icing and crushed white candy. Be creative! There are a million possibilities!
